How to organise the service for 50 people?
Plan two buffet points rather than one: with 50 guests, a single table creates a queue and half the guests never get near it. Put out the savoury in two stages, half at the start and the other half thirty minutes later, then the sweet in the last half hour. The platters arrive arranged, ready to set down.
