Homemade macaron recipe (and our Pierre Morel macarons)
Getting macaron shells right at home: the step-by-step method. And our Pierre Morel macarons, gluten-free, delivered in Paris for your events.
The macaron has a reputation as a technical pastry, and it is deserved. But with the right method and a little patience, smooth shells with a neat frilly foot are within your reach. Here is the step-by-step recipe, and our Pierre Morel macarons for special occasions.
Ingredients (for about 30 macarons)
- 125 g ground almonds
- 125 g icing sugar
- 100 g egg whites (aged 24 hours, at room temperature)
- 100 g caster sugar
- Powdered food colouring (optional)
- For the filling: a chocolate ganache or a jam
Method
- Blend the ground almonds finely with the icing sugar, then sift.
- Whisk the egg whites, adding the caster sugar in three goes, until you have a firm, glossy meringue.
- Fold the dry ingredients into the meringue and do the macaronnage: mix with a spatula until the batter forms a ribbon that falls back slowly.
- Pipe even discs onto a tray lined with baking paper.
- Leave to form a skin for 30 minutes in the open air: the surface should no longer stick to your finger.
- Bake for 12 to 14 minutes at 150 °C. Leave to cool before peeling off.
- Fill with ganache, sandwich the shells together in pairs and keep in the fridge for 24 hours before eating.
Our tips
Weigh everything to the gram: the macaron does not forgive approximation. Letting a skin form is essential to get the frilly foot. And wait a night in the fridge: macarons are much better the next day.
