Marble cake is the ultimate comforting afternoon treat: two batters, vanilla and chocolate, swirled together for an indulgent visual effect. Here is our foolproof homemade recipe and, for days with no time, our ready-made loaf cakes.

Ingredients (for one loaf tin)

  • 200 g plain flour
  • 180 g softened butter
  • 180 g sugar
  • 4 eggs
  • 1 sachet of baking powder
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1 pinch of salt

Method

  1. Preheat the oven to 165 °C (conventional heat).
  2. Whisk the softened butter with the sugar until creamy.
  3. Add the eggs one at a time, then the flour sifted with the baking powder and salt.
  4. Divide the batter in two. Stir the vanilla into one half and the cocoa into the other.
  5. Pour the two batters alternately into the buttered tin, then run a knife blade through in a zigzag to create the marbling.
  6. Bake for 45 to 50 minutes. Check it is done with the tip of a knife: it should come out dry.

Our tips

Take the butter and eggs out ahead of time: at room temperature, the batter is smoother. For a cake with a nice crack on top, pipe a line of softened butter down the centre before baking. And do not overbake: the centre should stay moist.
