How to organise the service?
- Four buffet points spread around the room: a single buffet for 100 guests creates a fifteen-minute queue.
- The same content everywhere: if one point offers a canapé the others do not have, everyone crowds around it.
- Service in three waves: light on arrival, filling in the middle, sweet at the end.
- A bar separate from the buffets, so the drinks queue does not block access to the canapés.
How many guests to count on?
For an internal event, count on the number registered. For a reception with external guests, some of those registered do not come: ask for confirmation two days before and order for the confirmed number, with a 10% margin.
