Babka: where to find the best in Paris and how to serve it at an office breakfast
Babka Zana, Mamiche, Florence Kahn: the recognised babka addresses in Paris, how to choose one, how many to plan and how to serve it at an office breakfast.
In Paris, the best babka is found at the specialists of this brioche from the Eastern European Jewish tradition: Babka Zana in the 9th arrondissement, Mamiche in the 9th and 10th, Florence Kahn in the Marais. For an office breakfast, serve it sliced, next to the pastries: a babka of 5 to 6 portions replaces a cake without cutlery. At L'Écrin Traiteur, our chocolate babka is delivered already sliced, from 6:30 am.
What is a babka?
A brioche rolled around a filling (chocolate, cinnamon, pistachio…), twisted then baked in a tin. When cut, each slice shows swirls of filling. It comes from the Eastern European Jewish tradition and became known in Paris through a few specialist bakeries.
Where to find the best babka in Paris? Our selection
1. L'Écrin Traiteur's babka
Transparency: this is our product. A soft brioche rolled with chocolate, served sliced, for 5 to 6 people. It is the generous piece that makes a change from the loaf cake or the classic cake, and it is easy to share over a coffee. It arrives ready to put on the table.
2. Babka Zana, rue Condorcet (9th arrondissement)
Opened in January 2020 at 65 rue Condorcet by Sarah Amouyal and Emmanuel Murat, with help on the recipe from pastry chef Benoît Castel. At the opening, Sortiraparis listed four flavours: cinnamon-muscovado, pistachio-orange blossom, halva-lemon and chocolate-hazelnut. Its website now offers babkas as a loaf and as individual rolls, with collection from its Condorcet and Vosges shops.
3. Mamiche (9th and 10th arrondissements)
A bakery at 45 rue Condorcet (9th arrondissement) and 32 rue du Château-d'Eau (10th arrondissement). Paris Zigzag and Do It In Paris cite its babka, a cocoa-marbled brioche scented with orange blossom.
4. Florence Kahn, rue des Écouffes (4th arrondissement)
At 24 rue des Écouffes, in the Marais, this bakery and delicatessen, which Gault&Millau describes as "one of the haunts of Yiddish cooking in Paris", makes a chocolate babka. According to Do It In Paris, it can be ordered all year round.
How to recognise a good babka?
| Criterion | Good sign | Bad sign |
|---|---|---|
| The cut | Clear swirls across the whole slice | Filling concentrated in the centre or missing |
| The crumb | Stringy, soft, coming apart in layers | Dry or dense |
| The filling | Enough chocolate to taste it in every bite | A mere dusting of cocoa |
| The top | Shiny, often glazed with a light syrup | Pale and dry |
How to serve a babka at an office breakfast?
- Sliced in advance: in portions of about 2 cm. With a whole babka on the table, nobody dares to start it.
- Next to the pastries, not instead of them: it plays the role of the cake.
- With napkins: the chocolate filling marks the fingers.
- At the end of the meeting if the meeting runs long: it stays soft for several hours, unlike a croissant.
How many babkas to plan and what budget for 10, 20 or 50 people?
Our babka serves 5 to 6 people, at €24.90 excl. VAT. The calculation takes the cautious assumption of 5 portions per babka, 1 portion per person. Delivery €29 excl. VAT.
| People | Babkas | Calculation | Total excl. VAT, delivery included |
|---|---|---|---|
| 10 | 2 | 2 × 24.90 = €49.80 + €29 | €78.80 |
| 20 | 4 | 4 × 24.90 = €99.60 + €29 | €128.60 |
| 50 | 10 | 10 × 24.90 = €249 + €29 | €278 |
In a full breakfast, the babka replaces the petits fours: 2 mini pastries and 1 portion of babka per person are enough. To put together the rest, see our guide how many pastries per person.
