What to check with a caterer for a halal cocktail reception?

"Halal" does not mean the same thing from one caterer to the next. Five items deserve a precise question before you sign a quote.

ItemWhat raises questionsAt L'Écrin
MeatOrigin and slaughterHalal across the whole menu, no pork
Cured meatsHam, lardons, saucisson in the savoury canapésNo pork cured meats
Sauces and marinadesWine, beer or alcohol in a reductionNo alcohol in the recipes
DessertsAlcohol in a cream, pork gelatineNo alcohol; ask for the dessert's product sheet if in doubt
DrinksChampagne, wine, beer100% alcohol-free drinks menu, 0% Chardonnay for the toast

Should you plan a separate halal buffet?

No, and it is better to avoid one. A separate buffet singles out the people who use it. When the whole menu is halal and pork-free, everyone eats the same thing and nobody has to identify themselves. For vegetarian guests, simply plan a few labelled canapés: we add them on request, with the number of people concerned.

And the drinks?

Our drinks menu is alcohol-free: Alain Milliat juices and nectars, lime and ginger infusion, still and sparkling water, and a 0% Chardonnay Blanc de Blancs for the toast. Allow 3 drinks per person for a two-hour reception, 3 to 4 beyond that.
