Allergens: what must a caterer show on a corporate buffet or trays?
The 14 allergens to declare, how the information must be given for a buffet or delivered trays, and what the caterer must provide before ordering and on delivery.
Since 1 July 2015, a caterer must state in writing the presence of the 14 regulated allergens in its dishes, including when they are not packaged: buffets, trays, canapés. Here is what the rule says and what to ask your caterer.
The 14 allergens to declare
| # | Allergen | # | Allergen |
|---|---|---|---|
| 1 | Cereals containing gluten | 8 | Tree nuts |
| 2 | Crustaceans | 9 | Celery |
| 3 | Eggs | 10 | Mustard |
| 4 | Fish | 11 | Sesame seeds |
| 5 | Peanuts | 12 | Sulphur dioxide and sulphites |
| 6 | Soya | 13 | Lupin |
| 7 | Milk | 14 | Molluscs |
Only allergens deliberately added to the recipe are concerned.
In what form for a buffet or trays?
- In writing: a verbal answer alone is not enough.
- On the dish or right next to it for a buffet: a legible label or sheet.
- Freely accessible to guests, without having to find someone.
And for a remote order?
When you order via the website, by email or by phone, the European INCO regulation (article 14) requires the information to be available before ordering, free of charge, then provided at the time of delivery. Ask for it with the quote, and check that a sheet comes with the delivery.
What the company must do on its side
- List the allergies a week before, in the invitation or the registration form.
- Pass them on to the caterer with the number of people concerned: "2 people allergic to tree nuts".
- Ask for separate, named portions for severe allergies.
- Display the sheet next to the buffet on the day.
