The Christmas tea is Mariage Frères' Esprit de Noël®, their festive blend: a black tea with gentle spices and fruit — apple, mandarin, cinnamon and almond — with orange peel and pieces of Bourbon vanilla. Many Christmas teas on the shelf are flavoured with rum or amaretto; this one is not, which is why we chose it, since our whole menu is alcohol-free. Brewed five minutes at 95 °C, and the leaves come out before the flask is filled: a tea that keeps brewing in transit turns bitter.
